Berner Ziegeleischinken
A traditional dish from Bern, the Ziegeleischinken is a delicious preparation of mountain lamb.

Ingredients
- 1 kg of mountain lamb
- 2 onions
- 2 cloves of garlic
- 100 g of raw bacon
- 100 g of grana cheese
- 100 g of bread
- 100 g of butter
- salt and pepper
- 2 eggs
- 1 tablespoon of chopped parsley
- 1 tablespoon of chopped thyme
Method
- Cut the mountain lamb into equal-sized pieces.
- In a pan, sauté the onions and garlic in a bowl with butter.
- Add the mountain lamb and cook until it is well done.
- In another bowl, mix the raw bacon, grana cheese, bread crumbs, eggs, parsley, and thyme.
- Place the cooked meat in a casserole and add the vegetable sauce prepared with the sautéed vegetables.
- Cover the meat with the prepared sauce and bake in the oven at 180°C for 30-40 minutes.
- Serve hot with sweet potatoes or a salad of vegetables.
