  • 1 kg of Bergmannspitz (mountain meat)
  • 1000 g of sauerkraut
  • 2 onions
  • 3 carrots
  • 2 garlic cloves
  • 200 ml of meat broth
  • 2 tablespoons of salt
  • 1 tablespoon of black pepper
  • 2 tablespoons of olive oil

Method

  1. Prepare the Bergmannspitz by cutting the meat into equal-sized pieces.
  2. In a large pan, heat the olive oil and add the onions and garlic, sauté until they turn golden brown.
  3. Add the cubed carrots and cook for a few minutes.
  4. Add the pieces of Bergmannspitz to the pan and cook over medium heat for 20-25 minutes.
  5. Add the meat broth, salt, and pepper, cover, and cook over low heat for 1-1.5 hours, until the meat is tender.
  6. In another pan, heat the sauerkraut and add salt and pepper to taste.
  7. Serve the Bergmannspitz with sauerkraut hot, accompanied by potatoes or rice.
