Bergmannspitz with Sauerkraut

Ingredients
- 1 kg of Bergmannspitz (mountain meat)
- 1000 g of sauerkraut
- 2 onions
- 3 carrots
- 2 garlic cloves
- 200 ml of meat broth
- 2 tablespoons of salt
- 1 tablespoon of black pepper
- 2 tablespoons of olive oil
Method
- Prepare the Bergmannspitz by cutting the meat into equal-sized pieces.
- In a large pan, heat the olive oil and add the onions and garlic, sauté until they turn golden brown.
- Add the cubed carrots and cook for a few minutes.
- Add the pieces of Bergmannspitz to the pan and cook over medium heat for 20-25 minutes.
- Add the meat broth, salt, and pepper, cover, and cook over low heat for 1-1.5 hours, until the meat is tender.
- In another pan, heat the sauerkraut and add salt and pepper to taste.
- Serve the Bergmannspitz with sauerkraut hot, accompanied by potatoes or rice.
