Beef with Morels

A beef dish with morels in an intensely aromatic broth, typical of the Burgundy region in France.

Ingredients
- 500 g of beef sliced
- 200 g of morels
- 2 onions
- 2 carrots
- 2 cucumbers
- 2 cloves of garlic
- 2 liters of beef broth
- 2 sprigs of rosemary
- 1 tablespoon of black pepper
- 1 tablespoon of salt
- 2 sprigs of thyme
- 2 sprigs of parsley
Method
- In a large pot, heat some oil and fry the beef slices until well cooked.
- Remove the beef and set it aside. Add the onions, carrots, and cucumbers cut into cubes and fry until golden.
- Add the garlic and fry for a few more minutes.
- Return the beef to the pot, add the beef broth, rosemary leaves, pepper, salt, thyme, and parsley. Bring to a boil and reduce to a low heat.
- Cook for about 45 minutes, adding water occasionally if the broth becomes too concentrated.
- Add the morels and cook for another 10-15 minutes, until the broth has thickened and become intensely aromatic.
- Serve hot, with a drizzle of olive oil and a sprinkle of chopped parsley.

This dish was perfected in the French Burgundy region, where wild morels grow abundantly in the forests, giving it a unique and sought-after aroma.
