Ingredients

  • 500 g of beef in pieces
  • 2 onions, chopped
  • 2 carrots, cubed
  • 1 zucchini, sliced
  • 200 g of beans
  • 1 liter of beef broth
  • 2 cloves of garlic, crushed
  • 1 basil leaf
  • 1 tablespoon of chili powder
  • salt and pepper to taste
  • 2 cups of tomato sauce
  • 1 tablespoon of olive oil

Method

  1. In a large pot, heat the olive oil and sauté the onions and garlic for 5 minutes.
  2. Add the beef pieces, cook for 5 minutes, then add the beef broth.
  3. Bring to a boil, cover, and simmer over medium-low heat for 2 hours or until the meat is tender.
  4. Add the carrots, zucchini, beans, and tomato sauce, stir well, and cook for another 30 minutes.
  5. Turn off the heat, season with salt and pepper to taste, and add the basil leaf.
  6. Let it cool for a few minutes before serving, to allow the flavors to meld.

Cazuela de res is a traditional Chilean dish, originally from the southern regions, but now beloved throughout Santiago. It is a slow-cooked meat stew that ensures every piece is tender and flavorful.
