Ingredients

  • 200 g of fresh fava beans
  • 200 g of cooked ham
  • 1 onion
  • 2 carrots
  • 2 garlic cloves
  • 2 liters of beef broth
  • 200 ml of olive oil
  • salt and pepper to taste
  • 100 g of chopped parsley

Method

  1. Clean the fava beans and cook them in salted water for about 45 minutes.
  2. Dice the garlic and onion.
  3. In a large pot, heat the olive oil and sauté the garlic and onion.
  4. Add the diced carrots and sauté for a few minutes.
  5. Add the cooked fava beans and beef broth, bring to a boil and simmer for 15 minutes.
  6. Slice the cooked ham into strips and add it to the soup.
  7. Spoon with a little olive oil and season with salt and pepper.
  8. Serve hot, garnished with chopped parsley.
