Bauernschmaus
A delicious and warming dish, Bauernschmaus is a traditional specialty of Tyrolean cuisine, perfect for chilly winter afternoons.

Ingredients
- 2 kg of pork (ham, bacon, pork ribs)
- 1 kg of potatoes
- 500 g of cauliflower
- 500 g of carrots
- 500 g of onions
- 200 g of lentils
- 1 liter of meat broth
- 200 ml of olive oil
- Salt and pepper to taste
- 2 cloves of garlic
- 100 g of chopped parsley
- 100 g of grated Tyrolean cheese
Method
- Cut the pork into large pieces and fry in a pot with olive oil until golden brown.
- Add the whole carrots, whole potatoes, and lentils, cover with meat broth and cook over medium heat for about 1 hour.
- Cut the cauliflower into slices and add to the pot along with the halved onions.
- Continue to cook on low heat for about 30 minutes, adding water if necessary.
- Turn off the heat and let the preparation cool down.
- Before serving, mix in the parsley and grated Tyrolean cheese.
- Serving suggestion: serve hot with toasted bread.
