Ingredients

  • 400 g of chicken, cut into pieces
  • 200 g of wild mushrooms, cleaned and sliced
  • 50 g of raw prosciutto, sliced
  • 2 onions, chopped
  • 2 garlic cloves, chopped
  • 100 ml of extra virgin olive oil
  • 100 ml of chicken broth
  • 2 basil leaves
  • salt and pepper to taste
  • 100 g of pecorino cheese, grated

Method

  1. In a pan, heat the olive oil and sauté the onions and garlic until they turn golden.
  2. Add the chicken and cook until it is well done.
  3. Add the mushrooms and cook for a few minutes, then add the prosciutto.
  4. Pour in the chicken broth and let it boil for 5 minutes.
  5. Add the basil leaves, salt, and pepper, stir, and cook for another 2 minutes.
  6. Finally, add the grated pecorino and stir until the cheese has melted.
  7. Serve immediately.
