A traditional Treiso appetizer made with chicken and wild mushrooms.

Ingredients
- 400 g of chicken, cut into pieces
- 200 g of wild mushrooms, cleaned and sliced
- 50 g of raw prosciutto, sliced
- 2 onions, chopped
- 2 garlic cloves, chopped
- 100 ml of extra virgin olive oil
- 100 ml of chicken broth
- 2 basil leaves
- salt and pepper to taste
- 100 g of pecorino cheese, grated
Method
- In a pan, heat the olive oil and sauté the onions and garlic until they turn golden.
- Add the chicken and cook until it is well done.
- Add the mushrooms and cook for a few minutes, then add the prosciutto.
- Pour in the chicken broth and let it boil for 5 minutes.
- Add the basil leaves, salt, and pepper, stir, and cook for another 2 minutes.
- Finally, add the grated pecorino and stir until the cheese has melted.
- Serve immediately.
