Ingredients
- 1 kg of chicken or fish
- 100 ml of coconut oil
- 1 onion
- 2 tomatoes
- 1 tablespoon of Guinea pepper
- 2 tablespoons of coconut paste
- 1 liter of water
- 1 tablespoon of ginger
- 1 tablespoon of chili
- Salt to taste
- 1 tablespoon of chives
- 1 tablespoon of coriander
Method
- Chop the onion and garlic and sauté them in a large pot with coconut oil.
- Add the chopped tomatoes and cook for 10 minutes.
- Add the Guinea pepper, coconut paste, ginger, and chili, stir well.
- Add the chicken or fish and a liter of water, bring to a boil.
- Simmer for 30 minutes, adding salt to taste.
- Grind the coriander seeds and add them to the broth.
- Let it cool and serve with coconut cream.
