Ingredients

  • 250 g of cornmeal
  • 200 ml of warm water
  • 1 tablespoon of salt
  • 1 tablespoon of palm oil
  • 1 tablespoon of cane sugar
  • 1 tablespoon of cornmeal
  • Water for greasing
  • Oil for frying

Method

  1. Mix the cornmeal, warm water, salt, palm oil, and cane sugar in a large bowl.
  2. Let the mixture rest for 30 minutes, then stir well again.
  3. Add the cornmeal and mix until you get a smooth consistency.
  4. Grease a baking tray with cold water and pour the cornmeal mixture onto it.
  5. Fry over medium-high heat in hot oil until they become golden and crispy.
  6. Use a spatula to flip them and let them cool.
  7. Serve them hot as an appetizer or as a side dish.

The story

Bammy has its roots in Afro-Caribbean communities, where it was a way to use the by-products of maize harvest. Today, it is a popular dish throughout Jamaica.
