A traditional Lebanese dish, Bamia Bi Jiben is a delightful eggplant soup seasoned with aromatic herbs.

Ingredients
- 4 eggplants
- 500 g zucchini
- 2 onions
- 4 garlic cloves
- 200 ml olive oil
- 1 liter vegetable broth
- 1 tablespoon white wine vinegar
- salt and pepper to taste
- 2 tablespoons chopped parsley
- 2 tablespoons chopped thyme
- 1 tablespoon chopped oregano
- 1 tablespoon chopped kale
Method
- Clean the eggplants and zucchini thoroughly, then slice them thinly.
- In a large pan, heat the olive oil. Add the onions and garlic, sauté for 5 minutes.
- Add the sliced eggplants and zucchini, sauté for another 10-15 minutes.
- Pour in the vegetable broth, bring to a boil, reduce heat, and let simmer for 20-25 minutes.
- Add the white wine vinegar, salt, and pepper, stir well.
- Finally, add the chopped herbs and stir for a minute.
- Serve hot, garnished with additional chopped parsley.
