Ingredients

  • 4 local chicken breeds, each about 1.5 kg
  • 300 ml of olive oil
  • 200 g of cured bacon
  • 200 g of pancetta
  • 200 g of carrots
  • 200 g of onions
  • 200 g of celery
  • 100 ml of white wine
  • 100 ml of chicken broth
  • salt and pepper to taste
  • 200 g of potatoes
  • 200 g of green beans

Method

  1. Prepare the chicken: cut the chicken into pieces of about 200-250g each, clean and season with salt.
  2. In a pan, fry with olive oil and cured bacon, add pancetta and cook for 5-7 minutes.
  3. Add the carrots, onions, and celery, cook for another 5-7 minutes.
  4. In a casserole, pour the white wine, chicken broth, salt, and pepper, bring to a boil.
  5. Add the chicken pieces and cook on medium heat for 30-40 minutes, checking the cooking.
  6. In another casserole, cook the potatoes and green beans separately, then add them to the chicken.
  7. Serve hot, garnishing with some fresh herbs.

Ballymaloe Chicken originated at the Ballymaloe estate in Kerry, where the Butler family developed innovative and sustainable cooking techniques.
