Ingredients

  • 500g salted cod
  • 200g potatoes
  • 100g zucchini
  • 2 onions
  • 200g dried tomatoes
  • 100g parsley
  • 200ml extra virgin olive oil
  • 100ml white wine
  • salt and pepper to taste

Method

  1. Rinse the salted cod and soak it in water for at least 24 hours, changing the water every 6 hours.
  2. Cut the potatoes into cubes, the zucchini into thin slices, and the onion into cloves.
  3. In a pan, sauté the onion in olive oil, then add the potatoes and zucchini, cook over medium heat for 10 minutes.
  4. Add the dried tomatoes and parsley, stir well and cook for another 5 minutes.
  5. Bake for 20 minutes at 180°C.
  6. In a pan, mix the salted cod with white wine, salt, and pepper, let it boil for 5 minutes.
  7. Place the salted cod in the baking dish with the vegetables and bake for another 20 minutes at 180°C.
  8. Let it cool for a few minutes before serving.

The story

Baked Salted Cod is a Venetian specialty that dates back to the time when Venice was a powerful maritime republic, with a wide network of fishing vessels bringing salted fish from Norway and the Baltic Sea.
