Baked Salted Cod

A classic of Venetian cuisine, Baked Salted Cod is exquisite and rich in flavor.

Ingredients
- 500g salted cod
- 200g potatoes
- 100g zucchini
- 2 onions
- 200g dried tomatoes
- 100g parsley
- 200ml extra virgin olive oil
- 100ml white wine
- salt and pepper to taste
Method
- Rinse the salted cod and soak it in water for at least 24 hours, changing the water every 6 hours.
- Cut the potatoes into cubes, the zucchini into thin slices, and the onion into cloves.
- In a pan, sauté the onion in olive oil, then add the potatoes and zucchini, cook over medium heat for 10 minutes.
- Add the dried tomatoes and parsley, stir well and cook for another 5 minutes.
- Bake for 20 minutes at 180°C.
- In a pan, mix the salted cod with white wine, salt, and pepper, let it boil for 5 minutes.
- Place the salted cod in the baking dish with the vegetables and bake for another 20 minutes at 180°C.
- Let it cool for a few minutes before serving.
The story
Baked Salted Cod is a Venetian specialty that dates back to the time when Venice was a powerful maritime republic, with a wide network of fishing vessels bringing salted fish from Norway and the Baltic Sea.
