Ingredients

  • 400 g pork ribs
  • 200 ml coconut oil
  • 100 ml coconut milk
  • 2 dried tangerine peel
  • 2 lemon leaves
  • 2 onions
  • 2 garlic cloves
  • 2 dried chili
  • 2 star anise
  • 1 tbsp salt
  • 1 tbsp soy sauce
  • 1 red onion

Method

  1. Trim and cut the pork ribs into small pieces.
  2. Fry the pork ribs in a pot with coconut oil until they turn golden brown.
  3. Add the onions, garlic, dried chilies, star anise, and lemon leaves. Sauté for 5 minutes.
  4. Add the dried tangerine peel and water. Bring to a boil, reduce heat, and let simmer for 1 hour.
  5. Add the salt, soy sauce, and red onion. Stir well and let simmer for another 30 minutes.
  6. Serve hot with your choice of vegetables.

The story

Bak Kut Teh, a classic of Malaysian cuisine, has origins dating back to British colonial times when agricultural workers prepared this soup to warm themselves.
