Bak Kut Teh
A sweet and aromatic pork rib soup served with vegetables and condiments.

Ingredients
- 400 g pork ribs
- 200 ml coconut oil
- 100 ml coconut milk
- 2 dried tangerine peel
- 2 lemon leaves
- 2 onions
- 2 garlic cloves
- 2 dried chili
- 2 star anise
- 1 tbsp salt
- 1 tbsp soy sauce
- 1 red onion
Method
- Trim and cut the pork ribs into small pieces.
- Fry the pork ribs in a pot with coconut oil until they turn golden brown.
- Add the onions, garlic, dried chilies, star anise, and lemon leaves. Sauté for 5 minutes.
- Add the dried tangerine peel and water. Bring to a boil, reduce heat, and let simmer for 1 hour.
- Add the salt, soy sauce, and red onion. Stir well and let simmer for another 30 minutes.
- Serve hot with your choice of vegetables.
The story
Bak Kut Teh, a classic of Malaysian cuisine, has origins dating back to British colonial times when agricultural workers prepared this soup to warm themselves.
