Bacon and Egg Pie

A classic Wanganui dish, rich in bacon and eggs, crispy and delicious.

Ingredients
- 200g smoked bacon
- 8 eggs
- 200g flour
- 100g butter
- 1 onion
- 200g grated cheese
- salt and pepper to taste
- 1 egg for cooking
Method
- Cut the smoked bacon into pieces and cook in a pan with butter until crispy and the sauce has thickened.
- Meanwhile, mix the flour with a little water to form a dough.
- In a baking dish, place the cooked bacon and add the beaten eggs, chopped onion, grated cheese, and salt and pepper to taste.
- Cover with the flour dough and make a hole in the center for heat to escape.
- Brush the surface with a beaten egg and bake in the oven at 180°C for about 30-40 minutes, until the dough is golden.
- Let it cool for a few minutes before serving.

The bacon and egg pie is a local specialty of Wanganui, dating back to British colonization, where the rich ingredients and recipe have evolved over time.
