Ingredients

  • 400g of bacchole
  • 500g of potatoes
  • 2 onions
  • 2 cucumbers
  • 200ml of olive oil
  • 200ml of fish broth
  • 1 teaspoon of black pepper
  • Salt to taste
  • 100g of beans
  • 100g of parsley
  • 1 lemon

Method

  1. Peel and cut the potatoes into cubes. Cook in salted water until soft.
  2. Chop the onions and cucumbers into small pieces. In a pan, sauté the onions until golden brown.
  3. Add the cucumbers and cook for another 5 minutes.
  4. In a pot, heat the olive oil, fish broth, pepper, and salt. Add the bacchole and bring to a boil.
  5. In a second pan, heat some oil and add the potato cubes. Cook for 10-15 minutes.
  6. Add the beans and chopped parsley. Mix well.
  7. Place the potatoes in a pot with the bacchole sauce and cook for 5-10 minutes.
  8. Squeeze the lemon juice and serve hot, garnished with parsley.

Bacalhau à Lagareiro is a Portuguese specialty, particularly popular in Lisbon, where salt cod pieces, or bacchole, are prepared with cucumbers and potatoes in a rich sauce.
