Bacalhau à Lagareiro

A traditional Lisbon dish, Bacalhau à Lagareiro is a delicious preparation featuring salt cod and potatoes in a onion and cucumber sauce.

Ingredients
- 400g of bacchole
- 500g of potatoes
- 2 onions
- 2 cucumbers
- 200ml of olive oil
- 200ml of fish broth
- 1 teaspoon of black pepper
- Salt to taste
- 100g of beans
- 100g of parsley
- 1 lemon
Method
- Peel and cut the potatoes into cubes. Cook in salted water until soft.
- Chop the onions and cucumbers into small pieces. In a pan, sauté the onions until golden brown.
- Add the cucumbers and cook for another 5 minutes.
- In a pot, heat the olive oil, fish broth, pepper, and salt. Add the bacchole and bring to a boil.
- In a second pan, heat some oil and add the potato cubes. Cook for 10-15 minutes.
- Add the beans and chopped parsley. Mix well.
- Place the potatoes in a pot with the bacchole sauce and cook for 5-10 minutes.
- Squeeze the lemon juice and serve hot, garnished with parsley.
The story
Bacalhau à Lagareiro is a Portuguese specialty, particularly popular in Lisbon, where salt cod pieces, or bacchole, are prepared with cucumbers and potatoes in a rich sauce.
