B'stilla

B'stilla is a traditional Moroccan sweet, a true culinary masterpiece made of layers of pastry filled and caramelized.

Ingredients
- 8 sheets of phyllo dough
- 200 grams of lamb
- 150 grams of almonds
- 100 grams of sugar
- 80 ml of water
- 1 lemon
- 1 tablespoon of vanilla essence
- 1 cup of powdered sugar
- 1 teaspoon of water
- A pinch of salt
- 100 grams of ground cinnamon
- 100 grams of chopped pistachios
Method
- Prepare the lamb by cutting it into small pieces and cooking it with salt, water, and lemon for 1 hour.
- In another pan, boil the almonds in water for 10 minutes, then drain and let cool.
- In a bowl, mix the sugar, water, vanilla essence, cinnamon, and salt to make the caramel sauce.
- Place a sheet of phyllo dough on a work surface and brush with a drop of oil.
- Place a handful of lamb, a few almonds, and a handful of chopped pistachios on a sheet of dough.
- Cover with another sheet of phyllo dough and repeat until all sheets are used.
- Bake the B'stilla in the oven at 180°C for 20-25 minutes until golden and the sauce is sticky.
- Serve the B'stilla with the caramel sauce while hot.
The story
Originating from the southern regions of Morocco, B'stilla was traditionally prepared by shepherds using readily available ingredients such as eggs and dried fruit.
