Ingredients
- 4 chickens
- 200 ml palm oil
- 100 g onion
- 50 g chili
- 50 g ginger
- 50 g red onion
- 200 ml water
- 100 g lemon juice
- salt to taste
- pepper to taste
- 100 g mint
- 100 g basil
Method
- Prepare the chicken by cutting the chickens into pieces and setting them aside.
- In a pot, mix the palm oil, water, salt, and pepper.
- Chop the garlic, chili, ginger, and red onion and add them to the oil mixture.
- Bring to a boil and let it infuse for 10 minutes.
- Add the chicken, cover, and cook over medium heat for 30 minutes.
- In another bowl, mix the lemon juice, basil, and mint.
- Pour the lemon mixture over the chicken and serve.
