Arroz con Leche

A sweet combination of soft rice and milk, traditional in Colombian cuisine.

Ingredients
- 200g of cooking rice
- 1 liter of milk
- 100g of sugar
- 1 teaspoon of cinnamon powder
- 1 teaspoon of vanilla powder
- 1/2 teaspoon of nutmeg
- 100g of crushed almonds
- 100g of cocoa powder
- 100g of cream
- Granulated sugar for decoration
Method
- Rinse the rice and cook it in salted water for 10-12 minutes until it is soft.
- In a pot, bring the milk to a boil and add the rice, sugar, cinnamon, vanilla, and nutmeg. Stir well.
- Cover and cook over medium-low heat for 10-15 minutes, stirring occasionally, until the rice is fully soaked in milk.
- Add the cream and stir well. Continue cooking for another 5-10 minutes until the preparation is thick and creamy.
- Add the crushed almonds and cocoa powder, stirring well.
- Let the preparation cool down and serve either cold or warm, decorated with granulated sugar.

Arroz con Leche is a traditional dish from Bogotá that dates back to the Spanish conquistadors, who added milk to cereals to create this sweet treat.
