Arican Potato Stew

Ingredients
- 3 kg of potatoes
- 500 g of beef cubes
- 2 onions
- 2 carrots
- 2 cabbages
- 1 zucchini
- 1 liter of beef broth
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1 tablespoon of chili powder
- 200 g of beans
- 2 spring onions
Method
- Peel and cut the potatoes into cubes. Also, chop the onions, carrots, cabbage, and zucchini into pieces.
- In a large pot, heat the olive oil and sauté the onions until they become golden brown.
- Add the beef cubes and cook until well done.
- Add the carrots, cabbage, zucchini, and beef broth. Bring to a boil and let cook for 20-25 minutes.
- Add the potatoes, beans, and chili powder. Cook for another 20-25 minutes or until the potatoes are tender.
- Turn off the heat and add salt and pepper to taste. Serve hot, accompanied by slices of toasted bread.
- Garnish with spring onions.
