Argentine Stuffed Potatoes
Papas Rellenas are a traditional dish from Salta, Argentina, filled with potatoes, cheese, and spices.

Ingredients
- 4 mature potatoes
- 300g grated cheese
- 1 onion
- 2 tablespoons olive oil
- 1/2 cup chicken broth
- Salt and pepper to taste
- 1 tablespoon smoked onion
- 1 tablespoon chili flakes
- 100g smoked prosciutto
- 1 egg
- 1 teaspoon oregano
Method
- Peel the potatoes, cut them into slices and cook in salted water for 15-20 minutes, until tender.
- In a pan, sauté the onion in olive oil, add the spices and chicken broth, let it heat up.
- In another bowl, mix the cheese with oil, smoked prosciutto, smoked onion, chili flakes, and oregano.
- Cut the potatoes in half and fill each with the cheese mixture.
- In a baking dish, arrange the stuffed potatoes, pour the onion sauce over them, and bake in the oven at 180°C for 20-25 minutes.
- Finally, add the egg in the last minute of cooking for added texture.
The story
Papas Rellenas became popular in Salta thanks to a farmer's family recipe, which she prepared to celebrate the Festival of the Mother Earth, an important religious and cultural event.
