Amala and Ewedu

A traditional West African dish, amala and ewedu is a delightful combination of yuca flour pudding and leafy vegetables.

Ingredients
- 200 g of yuca flour
- 1 liter of water
- 200 g of ewedu
- 1 onion
- 1 red bell pepper
- 3 spring onions
- 1 tablespoon of palm oil
- Salt to taste
- Black pepper to taste
Method
- In a pot, mix the yuca flour with water and bring to a boil. Reduce heat and cook for 30-40 minutes or until the dough is soft and smooth.
- In another pot, sauté the palm oil with finely chopped garlic and onion.
- Add the sliced red bell pepper and spring onions, and cook for 5-7 minutes.
- Add the washed ewedu, cut into pieces, stir well and cook for 10-15 minutes or until the vegetables are soft.
- Serve the amala in a bowl with the vegetable sauce.
- Turn off the heat and add salt and black pepper to taste.
