Almojabana
A traditional Colombian dish, almojabana is a delicious blend of vegetables, rice, and spices.

Ingredients
- 250 g of rice
- 1 kg of zucchini
- 400 g of tomatoes
- 2 onions
- 1 red onion
- 2 garlic cloves
- 500 ml of vegetable broth
- 100 g of beans
- 50 g of capers
- 1 teaspoon of red pepper
- salt and pepper to taste
- 2 tablespoons of olive oil
Method
- In a pot, sauté the garlic and onions in olive oil.
- Add the chopped tomatoes and cook for 10 minutes.
- Add the beans, capers, red pepper, salt, and pepper. Stir well.
- In a separate pan, cook the rice with vegetable broth for 15 minutes.
- Add the sliced zucchini to the sauté and cook for another 5 minutes.
- Mix the rice with the vegetable sauce and serve hot.
- Top with the sliced zucchini.
