Akpu (Cassava Pottage)

A traditional Nigerian dish, akpu is a creamy mandarin and cassava porridge, sweet and flavorful.

Ingredients
- 200 g of cassava
- 100 g of cashews
- 1 liter of coconut milk
- 1 tablespoon of sugar
- 1/2 teaspoon of cinnamon powder
- 1/4 teaspoon of cardamom powder
- 1 tablespoon of coconut oil
- Salt to taste
- 1 tablespoon of palm sugar (optional)
Method
- Peel the cassava and cut it into small pieces.
- Boil the cassava in water for 20 minutes, then squeeze it to remove the water.
- In a bowl, fry the cashews in coconut oil until golden brown.
- In a pot, mix the coconut milk, sugar, cinnamon, and cardamom.
- Add the squeezed cassava and cook for 10 minutes on medium heat.
- Add salt and palm sugar (if using), stirring well.
- Boil for another 5 minutes, reducing the consistency if needed.
- Serve hot.
