Ingredients

  • 400g of chicken
  • 4 potatoes
  • 200g of mushrooms
  • 500g of chicken broth
  • 2 lemons
  • 2 onions
  • 2 garlic cloves
  • 100g of flour
  • 200g of freekeh
  • Salt and pepper to taste
  • Olive oil
  • 1 tablespoon of sugar

Method

  1. Cut the chicken into pieces and put it in a pot with the broth and onions. Bring to a boil and simmer over medium heat for 30 minutes.
  2. In another pot, cook the potatoes and mushrooms in salted water for 20 minutes.
  3. While the potatoes and mushrooms are cooking, sauté the garlic in a bit of olive oil.
  4. Add the flour and freekeh, stir well and cook for 5 minutes.
  5. Add the chicken broth and lemon juice, stir and let boil for 10 minutes.
  6. Layer the chicken pieces with the broth and vegetables, add salt and pepper to taste.
  7. Serve hot with lemons and cornmeal cakes.

Ajiaco is a traditional Colombian dish originating from the Andean regions, where farmers would use leftover game and crops to create a warm and nourishing soup.
