Ajiaco
A hearty, warming soup served with chicken, potatoes, and mushrooms, accompanied by lemons and cornmeal cakes.

Ingredients
- 400g of chicken
- 4 potatoes
- 200g of mushrooms
- 500g of chicken broth
- 2 lemons
- 2 onions
- 2 garlic cloves
- 100g of flour
- 200g of freekeh
- Salt and pepper to taste
- Olive oil
- 1 tablespoon of sugar
Method
- Cut the chicken into pieces and put it in a pot with the broth and onions. Bring to a boil and simmer over medium heat for 30 minutes.
- In another pot, cook the potatoes and mushrooms in salted water for 20 minutes.
- While the potatoes and mushrooms are cooking, sauté the garlic in a bit of olive oil.
- Add the flour and freekeh, stir well and cook for 5 minutes.
- Add the chicken broth and lemon juice, stir and let boil for 10 minutes.
- Layer the chicken pieces with the broth and vegetables, add salt and pepper to taste.
- Serve hot with lemons and cornmeal cakes.
The story
Ajiaco is a traditional Colombian dish originating from the Andean regions, where farmers would use leftover game and crops to create a warm and nourishing soup.
