Ingredients

  • 800 g of beef or pork
  • 1/4 cup of chopped onion
  • 2 tablespoons of soy sauce
  • 2 tablespoons of vinegar
  • 2 tablespoons of palm oil
  • 4-5 tablespoons of Philippine chili peppers
  • 2 tablespoons of salt
  • 1 tablespoon of sugar
  • 2-3 bay leaves
  • 2-3 scallions, chopped
  • 1/2 cup of water

Method

  1. Cut the meat into equal-sized pieces and place them in a bowl.
  2. In another bowl, mix the soy sauce, vinegar, palm oil, chili peppers, salt, and sugar.
  3. Add the chopped onion and scallions to the meat and mix well.
  4. Pour the sauce over the meat and mix until the meat is fully coated.
  5. Cover the bowl and let it marinate for at least 2 hours or up to 24 hours for a more intense flavor.
  6. In a pot, cook the meat with the sauce and seasonings over medium heat for about 1 hour or until the meat is well cooked.
  7. Add the bay leaves and scallions, cover, and cook for an additional 10-15 minutes.
  8. Serve hot, accompanied by rice.

Adobo has ancient roots in Filipino cuisine but became particularly popular during the Spanish colonial era, which introduced the use of soy sauce and chili peppers.
