Adas Polo

A traditional Iranian dish, Adas Polo is a crunchy and flavorful delight.

Ingredients
- 200 g of lentils
- 1 onion
- 200 g of rice
- 100 ml of olive oil
- 1 lemon
- Salt and pepper to taste
- 100 g of crushed pistachios
- 200 ml of water
- 1 teaspoon of saffron
- 1 tablespoon of balsamic vinegar
- 1 red onion
Method
- Rinse the lentils thoroughly and cook them in salted water for about 20-25 minutes until they are soft.
- In a pan, sauté the olive oil with the chopped onions and garlic.
- Add water, ground saffron, and salt. Soak the rice in this solution for about 10 minutes.
- While the rice is soaking, thinly slice the red onion.
- Add the red onion to the pan with the rice and cook over medium heat for 5-7 minutes, stirring frequently.
- Finally, add the crushed pistachios and lemon juice, mix well, and serve hot.
- Layer the lentils and rice, garnish with lemon juice and a bit of salt and pepper.
