Ingredients

  • 200 g of lentils
  • 1 onion
  • 200 g of rice
  • 100 ml of olive oil
  • 1 lemon
  • Salt and pepper to taste
  • 100 g of crushed pistachios
  • 200 ml of water
  • 1 teaspoon of saffron
  • 1 tablespoon of balsamic vinegar
  • 1 red onion

Method

  1. Rinse the lentils thoroughly and cook them in salted water for about 20-25 minutes until they are soft.
  2. In a pan, sauté the olive oil with the chopped onions and garlic.
  3. Add water, ground saffron, and salt. Soak the rice in this solution for about 10 minutes.
  4. While the rice is soaking, thinly slice the red onion.
  5. Add the red onion to the pan with the rice and cook over medium heat for 5-7 minutes, stirring frequently.
  6. Finally, add the crushed pistachios and lemon juice, mix well, and serve hot.
  7. Layer the lentils and rice, garnish with lemon juice and a bit of salt and pepper.
