Açorda with Chouriço

A traditional Alentejo dish, Açorda with Chouriço is a hearty, rich, and flavorful soup.

Ingredients
- 400g of hard wheat bread cut into pieces
- 2 liters of meat broth
- 100g of chouriço cut into strips
- 3 onions chopped
- 2 tablespoons of olive oil
- 2 cloves of garlic
- 1 lemon
- salt and pepper to taste
- 2 eggs
Method
- In a pot, mix the meat broth with the bread and let it soak for 15-20 minutes.
- In a pan, sauté the garlic in olive oil.
- Add the onions and cook until they are golden.
- Add the chouriço and cook for 5-7 minutes.
- Beat the eggs in a bowl and slowly pour them into the broth, stirring to form a cream.
- Add lemon juice, salt, and pepper and mix well.
- Serve hot, garnished with a few onions and chouriço on top.
The story
Açorda with Chouriço has its roots in times of famine when poor families would use old bread and chouriço to create a nutritious and economical dish.
