Ingredients

  • 200g of ackee (opened)
  • 200g of saltimbocca (salted fish fillets)
  • 2 onions
  • 1 garlic clove
  • 200ml of olive oil
  • 100g of potatoes
  • 100g of tomatoes
  • Salt and pepper to taste
  • 2 tablespoons of soy sauce

Method

  1. In a pan, fry the saltimbocca fillets until golden brown.
  2. In a second pan, sauté the onions and garlic in olive oil.
  3. Add the cubed potatoes, tomatoes, and salt and pepper.
  4. Add the opened ackee and mix well.
  5. Cook on medium heat for 10-15 minutes, adding soy sauce.
  6. Serve hot, accompanied by a potato or rice side dish.

The story

Ackee and saltfish is a traditional Jamaican dish that originated during the exploration and colonization period, when sailors would carry salted fish on their voyages. Today, it is a culinary symbol of the island.
