Zürich Schnitzel

A classic of Zurich cuisine, Zürich Schnitzel features finely sliced beef attached to a delicious vegetable sauce.

Ingredients
- 500 g beef fillet
- 2 eggs
- 100 g bread crumbs
- oil for frying
- 1 onion
- 1 carrot
- 1 celery stick
- 1 zucchini
- 100 ml beef broth
- 200 ml cream
- salt and pepper
- cooking salt
Method
- Slice the beef fillet into thick, thin slices, about 0.5 cm thick.
- In a bowl, mix the eggs with a bit of salt and pepper. Dip the beef slices in this mixture.
- In another bowl, put the bread crumbs. Transfer the egg-coated beef slices into this bowl and make sure they are fully coated.
- Fry the beef slices in a pan with hot oil until golden and cooked.
- Dice the onion, carrot, and celery into small cubes. Also, slice the zucchini.
- In a saucepan, sauté the vegetables in a bit of oil until soft. Add the beef broth and cream, stir and let it boil for 10 minutes.
- Add the beef slices to the sauce and let it cook for another 5 minutes.
- Serve the Zürich Schnitzel hot, with the beef slices on top of the vegetable sauce.
The story
Zürich Schnitzel emerged in the 19th century as a culinary alternative for Zurich's Catholics who sought to avoid traditional pork cutlets during fasting weeks.
