Ingredients

  • 500 g beef fillet
  • 2 eggs
  • 100 g bread crumbs
  • oil for frying
  • 1 onion
  • 1 carrot
  • 1 celery stick
  • 1 zucchini
  • 100 ml beef broth
  • 200 ml cream
  • salt and pepper
  • cooking salt

Method

  1. Slice the beef fillet into thick, thin slices, about 0.5 cm thick.
  2. In a bowl, mix the eggs with a bit of salt and pepper. Dip the beef slices in this mixture.
  3. In another bowl, put the bread crumbs. Transfer the egg-coated beef slices into this bowl and make sure they are fully coated.
  4. Fry the beef slices in a pan with hot oil until golden and cooked.
  5. Dice the onion, carrot, and celery into small cubes. Also, slice the zucchini.
  6. In a saucepan, sauté the vegetables in a bit of oil until soft. Add the beef broth and cream, stir and let it boil for 10 minutes.
  7. Add the beef slices to the sauce and let it cook for another 5 minutes.
  8. Serve the Zürich Schnitzel hot, with the beef slices on top of the vegetable sauce.

The story

Zürich Schnitzel emerged in the 19th century as a culinary alternative for Zurich's Catholics who sought to avoid traditional pork cutlets during fasting weeks.
