Zucchini Empanada

A classic of Galician cuisine, the Zucchini Empanada is crispy and delicious.

Ingredients
- 200g of flour
- 100g of butter
- 100g of cold water
- 4 zucchinis
- 200g of pecorino cheese
- 1 onion
- 2 garlic cloves
- 100g of olive oil
- salt and pepper to taste
- 1 egg for cooking
Method
- Prepare the empanada dough: mix the flour with the butter and cold water until you get a homogeneous dough. Roll out the dough on a work surface and form a circle.
- Prepare the filling: slice the zucchini thinly, sauté with the onion and olive oil, add the pecorino cheese and finely chopped garlic, season with salt and pepper.
- Assemble the empanadas: place a slice of zucchini on half of the dough, add the filling, cover with the other half of the dough and seal the edges with beaten egg.
- Cook the empanadas: fry the empanadas in hot oil until they become crispy.
- Serve: serve the empanadas hot, optionally served with a tomato sauce.
