Ingredients

  • 400 g cheddar cheese
  • 2 tablespoons butter
  • 1 onion, chopped
  • 1/2 cup dark beer
  • 1/2 cup milk
  • salt, pepper
  • toasted bread
  • optional: nutmeg, chopped parsley

Method

  1. In a pan, melt the butter and sauté the chopped onion until golden brown.
  2. Add the cheese, salt, and pepper, stirring until the cheese melts.
  3. Add the dark beer and milk, stirring well.
  4. Bring to a boil, reduce the heat, and simmer for 10-15 minutes.
  5. Place the toasted bread topped with the cheese sauce under the grill until the cheese is golden and bubbly.
  6. Serve hot, garnished with optional nutmeg and chopped parsley.
