Welsh Rarebit

Ingredients
- 400 g cheddar cheese
- 2 tablespoons butter
- 1 onion, chopped
- 1/2 cup dark beer
- 1/2 cup milk
- salt, pepper
- toasted bread
- optional: nutmeg, chopped parsley
Method
- In a pan, melt the butter and sauté the chopped onion until golden brown.
- Add the cheese, salt, and pepper, stirring until the cheese melts.
- Add the dark beer and milk, stirring well.
- Bring to a boil, reduce the heat, and simmer for 10-15 minutes.
- Place the toasted bread topped with the cheese sauce under the grill until the cheese is golden and bubbly.
- Serve hot, garnished with optional nutmeg and chopped parsley.
