Kiełbasa warszawska is a Polish specialty featuring smoked sausage that is crispy and flavorful.

Ingredients

  • 500g ground meat (pork, pork and veal)
  • 200g pancetta
  • 1 onion
  • 1 tablespoon dried peppers
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1 tablespoon cayenne pepper
  • 1 teaspoon sugar
  • 200g flour
  • 100ml water
  • oil for frying

Method

  1. Fry the pancetta in a pan with a little oil, then drain and set aside.
  2. Sauté the onion in a pan with a little oil, then add the dried peppers.
  3. In another container, mix the ground meat with salt, pepper, cayenne pepper, and sugar.
  4. Add the fried pancetta and flour, mix well to form a homogeneous dough.
  5. Shape the sausages with the dough obtained and fry in hot oil until crispy.
  6. Drain the sausages just out of the oven on a paper towel to absorb excess moisture.

Kiełbasa warszawska originated in Warsaw, Poland, in the 19th century as a way to use leftover meat scraps.
