Ingredients

  • 1 kg of phyllo dough
  • 250 g of ricotta cheese
  • 200 g of sugar
  • 100 g of crushed almonds
  • 100 g of crushed walnuts
  • 100 g of fresh fruit (e.g., blueberries or cherries)
  • 1 egg
  • 1 tablespoon of vanilla extract
  • oil for frying
  • 100 g of powdered sugar for glazing
  • 1 tablespoon of water

Method

  1. Prepare the ricotta: mix the ricotta with sugar, crushed almonds, crushed walnuts, and vanilla extract.
  2. Prepare the phyllo dough: cut the phyllo dough into 10x10 cm squares.
  3. Form the pastries: place a spoonful of ricotta filling in each phyllo square, fold and shape into small pastries.
  4. Fry the pastries: fry the pastries in hot oil until golden brown.
  5. Add the fruit: place pieces of fresh fruit in the center of each pastry.
  6. Glaze: mix powdered sugar with water in a bowl and apply a drop of this solution to each vatrushka.
  7. Let cool and serve: allow the pastries to cool before serving.
