Ingredients
- 1 kg of phyllo dough
- 250 g of ricotta cheese
- 200 g of sugar
- 100 g of crushed almonds
- 100 g of crushed walnuts
- 100 g of fresh fruit (e.g., blueberries or cherries)
- 1 egg
- 1 tablespoon of vanilla extract
- oil for frying
- 100 g of powdered sugar for glazing
- 1 tablespoon of water
Method
- Prepare the ricotta: mix the ricotta with sugar, crushed almonds, crushed walnuts, and vanilla extract.
- Prepare the phyllo dough: cut the phyllo dough into 10x10 cm squares.
- Form the pastries: place a spoonful of ricotta filling in each phyllo square, fold and shape into small pastries.
- Fry the pastries: fry the pastries in hot oil until golden brown.
- Add the fruit: place pieces of fresh fruit in the center of each pastry.
- Glaze: mix powdered sugar with water in a bowl and apply a drop of this solution to each vatrushka.
- Let cool and serve: allow the pastries to cool before serving.
