Ingredients

  • 2 kg of cooked and mashed potatoes
  • 500 g of cottage cheese
  • 200 g of flour
  • 1 egg
  • 1 tablespoon of butter
  • Salt and pepper to taste
  • Oil for frying

Method

  1. Peel and cook the potatoes, then cool and mash them until you get a smooth puree.
  2. In a bowl, mix the cottage cheese with oil, egg, and a bit of salt and pepper.
  3. Add the potato puree and mix well to get a homogeneous mixture.
  4. In a bowl, separate the flour and make a well in the center. Add the potato and cheese mixture and mix until you get a dough.
  5. Divide the dough into pieces and form small balls. Then, with your hands, form small vareniki leaves.
  6. Fry the vareniki in a pan with hot oil until they become golden.
  7. Serve hot with a bit of butter or your preferred sauce.
