Ingredients
- 2 kg of cooked and mashed potatoes
- 500 g of cottage cheese
- 200 g of flour
- 1 egg
- 1 tablespoon of butter
- Salt and pepper to taste
- Oil for frying
Method
- Peel and cook the potatoes, then cool and mash them until you get a smooth puree.
- In a bowl, mix the cottage cheese with oil, egg, and a bit of salt and pepper.
- Add the potato puree and mix well to get a homogeneous mixture.
- In a bowl, separate the flour and make a well in the center. Add the potato and cheese mixture and mix until you get a dough.
- Divide the dough into pieces and form small balls. Then, with your hands, form small vareniki leaves.
- Fry the vareniki in a pan with hot oil until they become golden.
- Serve hot with a bit of butter or your preferred sauce.
