Turkish Pickled Vegetables
Turşu is a traditional Turkish pickled vegetable dish, a perfect choice for a flavorful and fresh appetizer.

Ingredients
- 1 kg of onions
- 500 g of carrots
- 300 g of cucumbers
- 200 g of red peppers
- 100 g of tomatoes
- 50 g of zucchini
- 1 liter of white wine vinegar
- 100 ml of water
- 50 g of sugar
- 30 g of salt
- 20 g of mint leaves
- 20 g of thyme leaves
- 10 g of black pepper
Method
- Wash and cut the vegetables into uniform pieces.
- In a pot, add the vinegar, water, sugar, salt, black pepper, mint, and thyme leaves, and bring to a boil.
- Add the vegetables and cook for 10-15 minutes.
- Check if the vegetables are sufficiently seasoned and aromatic, add more salt if needed.
- Let cool down and then put into glass jars with tight-fitting lids.
- Store in a cool place for at least a week before consuming.

Turşu has historical roots dating back to the Ottoman period, where it was a natural way to preserve vegetables.
