Tunisian Sardine Bourride

A delicious Tunisian sardine bourride, a traditional coastal dish that combines the briny taste of the sea with the crispy crust.

Ingredients
- 4 cans of sardines
- 2 onions
- 1 lemon
- 100g of flour
- 500ml of oil
- Salt and pepper to taste
- 100g of beans
- 100g of mixed vegetables
- 2 eggs
Method
- Clean and slice the onions, then sauté them in a pan with oil until they become golden brown.
- While the onions are cooking, drain and clean the sardines, then cut them into small pieces.
- In a bowl, mix the flour with the eggs, salt, and pepper.
- Add the chopped sardines and vegetables to the bowl with the flour mixture and mix well.
- In a pan, add the vegetable and fish broth, then add the beans and cook for a few minutes.
- In a separate bowl, prepare the whipped cream with the lemon juice.
- Add the whipped cream to the broth and gently mix.
- In a baking dish, place the pan with the onions and sardines, then pour the broth with the whipped cream over it.
- Bake at 180°C for 20-25 minutes, until the crust becomes golden brown.

Tunisian sardine bourride is a traditional dish from the Hammamet region, dating back to ancient times. It is said to have been first prepared by local fishermen using the catch of the day.
