Trabzon Pide

A delicious Trabzon pide, crispy on the outside and soft in the middle, served with a hint of mint.

Ingredients
- 1 kg of flour
- 300 ml of cold water
- 100 g of oil
- 100 g of butter
- 1 tablespoon of yeast
- 1 tablespoon of salt
- 1 tablespoon of sugar
- 100 g of feta cheese
- Mint sprigs for serving
Method
- In a large bowl, mix the flour, yeast, salt, and sugar.
- In another bowl, mix the cold water, oil, and butter until you get a homogeneous mixture.
- Pour the water-oil mixture into the flour mixture and knead until you get a smooth dough.
- Wrap the dough in plastic wrap and let it rise in a warm place for about 1 hour.
- Divide the dough into 4 equal parts and form 4 flat and thin pides.
- Make a hole in the center of each pide with a spoon.
- Make the feta cheese sauce with mint sprigs.
- Cook the pide on a baking tray with a little oil in the oven at 200°C for 20-25 minutes.
- Serve hot with the feta and mint sauce.
The story
Trabzon pide is a culinary tradition dating back to the Ottoman period, originally prepared to celebrate military victories. Today, it is cherished not only in Trabzon but throughout Turkey.
