Tom Yum Goong
A spicy and sweet soup with fresh prawns and typical Southeast Asian spices.

Ingredients
- 200g fresh prawns, halved
- 2 onions, chopped
- 2 garlic cloves, minced
- 2 Thai limes, zest, juice, and sugar
- 1 tablespoon dried chili powder
- 2 tablespoons shiitake mushroom extract
- 2 tablespoons coconut oil
- 1 liter chicken broth
- 1 tablespoon soy vinegar
- 1 tablespoon palm sugar
- 2 tablespoons chopped cilantro
- Salt to taste
Method
- In a pot, heat the coconut oil and sauté the onions and garlic until golden brown.
- Add the prawns and cook for 2 minutes, then add the lime juice, chili powder, shiitake mushroom extract, and chicken broth.
- Bring to a boil and cook for 5 minutes, adding palm sugar and soy vinegar to taste.
- Add the cilantro leaves, stir, and cook for another 2 minutes.
- Serve hot, adding salt to taste.
