Ingredients

  • 200g fresh prawns, halved
  • 2 onions, chopped
  • 2 garlic cloves, minced
  • 2 Thai limes, zest, juice, and sugar
  • 1 tablespoon dried chili powder
  • 2 tablespoons shiitake mushroom extract
  • 2 tablespoons coconut oil
  • 1 liter chicken broth
  • 1 tablespoon soy vinegar
  • 1 tablespoon palm sugar
  • 2 tablespoons chopped cilantro
  • Salt to taste

Method

  1. In a pot, heat the coconut oil and sauté the onions and garlic until golden brown.
  2. Add the prawns and cook for 2 minutes, then add the lime juice, chili powder, shiitake mushroom extract, and chicken broth.
  3. Bring to a boil and cook for 5 minutes, adding palm sugar and soy vinegar to taste.
  4. Add the cilantro leaves, stir, and cook for another 2 minutes.
  5. Serve hot, adding salt to taste.
