Tørrfisk, a typical salt-cured fish dish from the Lofoten islands, is a salty and fresh seafood appetizer that evokes the taste of the sea.

Ingredients
- 200 g of Tørrfisk
- 1 onion
- 2 cloves of garlic
- 50 ml of olive oil
- 100 g of dried beans
- 100 g of potatoes
- 100 ml of fish broth
- salt and pepper to taste
- 1 tablespoon of thyme
- 1 tablespoon of chopped parsley
- 1 tablespoon of white wine vinegar
Method
- Rinse the Tørrfisk and pat it dry with a paper towel.
- Slice the garlic thinly and dice the onion.
- In a pan, sauté the garlic and onion in olive oil.
- Add the Tørrfisk and cook for 5-7 minutes, stirring frequently.
- Add the diced potatoes, dried beans, and fish broth.
- Let it simmer for 20-25 minutes, adding water if needed.
- Finally, add the thyme, parsley, and white wine vinegar.
- Serve hot, garnished with fresh parsley.
The story
Tørrfisk has historical roots dating back to the 15th century, when the fishermen of the Lofoten islands used this method to preserve their sea catches.
