Sousas (Grilled Meat Skewers)

Sousas, traditional meat skewers grilled, are a popular dish in Northern Nigeria.

Ingredients
- 400g of beef
- 200g of pork
- 100g of lamb
- 1 tablespoon of Guinea pepper
- 2 tablespoons of black pepper
- 1 tablespoon of almond vinegar
- 1 tablespoon of palm oil
- Salt to taste
- 12 skewers for grilling
- 1 tablespoon of sugar
- 1 tablespoon of chili powder
- 1 teaspoon of bay leaf powder
Method
- Cut the beef, pork, and lamb into pieces about 2x2 cm.
- In a bowl, mix the Guinea pepper, black pepper, almond vinegar, palm oil, salt, sugar, chili powder, and bay leaf powder.
- Add the meat pieces to the marinade and mix well to ensure they absorb the flavors.
- Marinate for at least 2 hours or overnight.
- Prepare the skewers for grilling and thread the meat onto them.
- Grill the sousas over moderate heat for 15-20 minutes, turning frequently.
- Serve them hot with a chili and sugar sauce.
The story
Sousas were introduced to Northern Nigeria by Arab traders and have become an integral part of the local cuisine.
