A delicious and refreshing papaya salad with a spicy kick, typical of Nakhon Ratchasima, Thailand.

Ingredients
- 200 g of papaya, diced
- 100 g of eggplant, diced
- 50 g of red onion, diced
- 20 g of soy sauce
- 100 g of toasted sesame seeds
- 20 g of palm sugar
- 20 g of lemon juice
- 100 g of green onion, chopped
- 1 red chili, chopped
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 teaspoon of chili powder
- 100 g of almonds, chopped
Method
- Dice the papaya and set aside.
- Dice the eggplant, sauté it in a pan with a little oil, then set aside.
- In a bowl, mix the soy sauce, palm sugar, salt, black pepper, and chili powder.
- In a separate bowl, mix the red onion, green onion, red chili, almonds, and lemon juice.
- Add the papaya and eggplant to the seasoning mix and stir well.
- Top with soy sauce and toasted sesame seeds before serving.
The story
Som Tam originated during the opium wars when soldiers would eat these fruit salads to stay energized. Today, it is a beloved dish throughout Thailand.
