Sis Kebap is a traditional Istanbul dish with a crispy exterior and tender interior, served with a special sauce.

Ingredients
- 2 kg of pork shoulder
- 2 tablespoons of olive oil
- 1 tablespoon of salt
- 1 tablespoon of pepper
- 1 tablespoon of sugar
- 1 tablespoon of wine vinegar
- 1 tablespoon of chili powder
- 1 tablespoon of thyme
- 1 tablespoon of oregano
- 1 liter of water
- 1 tablespoon of apple cider vinegar
- 1 tablespoon of dried red peppers
Method
- Cut the pork shoulder into pieces about 5 x 5 cm.
- In a bowl, mix the olive oil, salt, pepper, sugar, wine vinegar, chili powder, thyme, oregano, water, apple cider vinegar, and dried red peppers.
- Marinate the pork pieces in the mixture for at least 4 hours, preferably overnight.
- Prepare a grill or fire pit and preheat it.
- Grill the pork pieces for about 15-20 minutes, turning them frequently for a crispy exterior.
- Serve the Sis Kebap with the marinade it was marinated in.
The story
Sis Kebap originated in Istanbul during the Ottoman period, when it was created as a unique way to cook pork meat differently from other local dishes.
