Ingredients

  • 4 artichokes
  • 200g of onion
  • 100g of zucchini
  • 100g of bell peppers
  • 100g of tomatoes
  • 50g of parsley
  • 100g of butter
  • 50g of olive oil
  • 2 tablespoons of balsamic vinegar
  • salt and pepper to taste
  • 100g of grated cheese

Method

  1. Clean the artichokes and chop the onion, zucchini, bell peppers, and tomatoes into small pieces.
  2. In a pan, sauté the onion in a mixture of olive oil and butter until it turns golden.
  3. Add the zucchini, bell peppers, and tomatoes, cook for a few minutes, and then add the balsamic vinegar.
  4. Fill each artichoke with the vegetable mixture and spices.
  5. Bake in a preheated oven for about 20 minutes.
  6. Before serving, sprinkle some parsley and cheese on top of each artichoke.
  7. Serve hot and enjoy this traditional Sicilian dish.
