A traditional Sicilian dish that combines crunchy artichokes with a soft filling of vegetables and spices.

Ingredients
- 4 artichokes
- 200g of onion
- 100g of zucchini
- 100g of bell peppers
- 100g of tomatoes
- 50g of parsley
- 100g of butter
- 50g of olive oil
- 2 tablespoons of balsamic vinegar
- salt and pepper to taste
- 100g of grated cheese
Method
- Clean the artichokes and chop the onion, zucchini, bell peppers, and tomatoes into small pieces.
- In a pan, sauté the onion in a mixture of olive oil and butter until it turns golden.
- Add the zucchini, bell peppers, and tomatoes, cook for a few minutes, and then add the balsamic vinegar.
- Fill each artichoke with the vegetable mixture and spices.
- Bake in a preheated oven for about 20 minutes.
- Before serving, sprinkle some parsley and cheese on top of each artichoke.
- Serve hot and enjoy this traditional Sicilian dish.
