Shrimp Patacones

Ingredients
- 24 slices of plantain
- 1000 g of shrimp
- 2 onions
- 3 tablespoons of olive oil
- 1 tablespoon of white wine vinegar
- 1 tablespoon of lemon juice
- 1 tablespoon of sugar
- Salt and pepper to taste
- 100 g of fried onion
- 2 tablespoons of cocktail sauce
- 12 mint leaves
Method
- Cut the plantain slices in half lengthwise, without cutting them all the way through.
- Fry the plantain slices in hot oil until crispy and let them cool.
- Cut the shrimp into small pieces and set aside.
- In a pan, sauté the chopped onions in olive oil.
- Add the shrimp and cook for a few minutes, seasoning with salt and pepper to taste.
- To assemble the patacones, place a spoonful of shrimp and a bit of fried onion on each plantain slice.
- Drizzle with white wine vinegar, lemon juice, and sugar, then add the cocktail sauce.
- Finish with mint leaves and serve immediately.
