Ingredients

  • 24 slices of plantain
  • 1000 g of shrimp
  • 2 onions
  • 3 tablespoons of olive oil
  • 1 tablespoon of white wine vinegar
  • 1 tablespoon of lemon juice
  • 1 tablespoon of sugar
  • Salt and pepper to taste
  • 100 g of fried onion
  • 2 tablespoons of cocktail sauce
  • 12 mint leaves

Method

  1. Cut the plantain slices in half lengthwise, without cutting them all the way through.
  2. Fry the plantain slices in hot oil until crispy and let them cool.
  3. Cut the shrimp into small pieces and set aside.
  4. In a pan, sauté the chopped onions in olive oil.
  5. Add the shrimp and cook for a few minutes, seasoning with salt and pepper to taste.
  6. To assemble the patacones, place a spoonful of shrimp and a bit of fried onion on each plantain slice.
  7. Drizzle with white wine vinegar, lemon juice, and sugar, then add the cocktail sauce.
  8. Finish with mint leaves and serve immediately.
