Seafood and Chicken Salad with Shrimp

A fresh and colorful salad, typical of Cartagena, Colombia, that combines the delights of the sea with the taste of chicken.

Ingredients
- 2 chicken breasts, diced
- 100 grams of peeled and cooked shrimp
- 100 grams of mussels, rinsed and blanched
- 100 grams of clams, rinsed and blanched
- 1 red bell pepper, diced
- 1 white onion, finely chopped
- 200 grams of tomatoes, cubed
- 100 grams of cucumbers, sliced
- 50 grams of olive oil
- 30 grams of white vinegar
- 5 grams of salt
- 3 grams of black pepper
Method
- In a pot, cook the shrimp and mussels for 2-3 minutes in salted water, then cool and drain.
- Dice the bell pepper and onion, and sauté them in a medium heat pan with olive oil.
- Add the chopped onion and cook for 1-2 minutes, then add the bell pepper and cook for another 2-3 minutes.
- In a large bowl, mix the peppers, onion, tomatoes, cucumbers, chicken, shrimp, and mussels.
- In a small bowl, mix the white vinegar, olive oil, salt, and black pepper.
- Pour the dressing over the salad and gently mix.
- Serve fresh as a salad.
