Sausage with Potato Puree
A classic German dish that combines the tenderness of the sausages with the creaminess of the potato puree.

Ingredients
- 400g pork sausages
- 600g potatoes
- 50g butter
- 100g cream
- 2 onions
- 200ml beef broth
- salt and pepper to taste
- 20g olive oil
Method
- In a large pot, cook the sausages in salted water for 10-15 minutes. Drain and let cool.
- Meanwhile, cook the potatoes whole in salted water for 20-25 minutes, until soft. Drain and let cool.
- Cut the potatoes into small pieces and fry in a pan with olive oil until golden. Drain.
- In a pan, melt the butter and add the sliced onions. Cook over medium heat until the onions are translucent.
- Add the beef broth and bring to a boil. Add the fried potatoes and season with salt and pepper to taste. Reduce the heat and simmer for 10-15 minutes, stirring occasionally.
- In another pan, bring the beef broth with the sausages to a boil for 5-10 minutes. Drain the sausages and cut them into slices.
- Add the cream to the potato puree and mix well. Season with salt and pepper.
- Serve the potato puree topped with slices of sausage.
