Ingredients

  • 400g pork sausages
  • 600g potatoes
  • 50g butter
  • 100g cream
  • 2 onions
  • 200ml beef broth
  • salt and pepper to taste
  • 20g olive oil

Method

  1. In a large pot, cook the sausages in salted water for 10-15 minutes. Drain and let cool.
  2. Meanwhile, cook the potatoes whole in salted water for 20-25 minutes, until soft. Drain and let cool.
  3. Cut the potatoes into small pieces and fry in a pan with olive oil until golden. Drain.
  4. In a pan, melt the butter and add the sliced onions. Cook over medium heat until the onions are translucent.
  5. Add the beef broth and bring to a boil. Add the fried potatoes and season with salt and pepper to taste. Reduce the heat and simmer for 10-15 minutes, stirring occasionally.
  6. In another pan, bring the beef broth with the sausages to a boil for 5-10 minutes. Drain the sausages and cut them into slices.
  7. Add the cream to the potato puree and mix well. Season with salt and pepper.
  8. Serve the potato puree topped with slices of sausage.
