Saltfish and Spinach
A traditional Jamaican dish, exquisite with its salty flavor and the freshness of the spinach.

Ingredients
- 200g of saltfish
- 500g of spinach
- 2 onions
- 2 cloves of garlic
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1 teaspoon of white vinegar
- 1 teaspoon of red pepper flakes
- 200g of dried beans (optional)
Method
- Rinse the saltfish and cut it into pieces.
- Sauté the onions and garlic in a tablespoon of oil for 5 minutes.
- Add the saltfish and red pepper flakes, sauté for another 5 minutes.
- Add the spinach and cook for 2 minutes, until just wilted.
- If using beans, cook them separately for 30 minutes and add them at the end.
- Serve in a dish and season with salt, pepper, and white vinegar.
