Ingredients

  • 4 ripe tomatoes
  • 2 onions
  • 2 zucchinis
  • 1 green pepper
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sugar
  • 1 tablespoon fig seeds

Method

  1. Clean and dice the tomatoes, onions, zucchinis, and green pepper.
  2. In a pan, heat the olive oil and sauté the onions lightly.
  3. Add the tomatoes, zucchinis, and green pepper, and sauté for about 10 minutes.
  4. Add salt, pepper, apple cider vinegar, and sugar, stirring well.
  5. Cover and cook on low heat for 20-25 minutes, stirring occasionally.
  6. Add the fig seeds and stir for an additional 5 minutes.
  7. Serve the Şakşuka hot over serving plates.
