Ingredients

  • 350 g rye flour
  • 200 g wheat flour
  • 100 g sesame seeds
  • 50 g flax seeds
  • 100 g butter
  • 100 g sugar
  • 100 g honey
  • 10 g dry yeast
  • 100 g warm water
  • 1 tablespoon salt
  • 3 eggs
  • 500 ml milk

Method

  1. Combine rye flour, wheat flour, sesame seeds, flax seeds, salt, and dry yeast in a large bowl.
  2. In another bowl, mix butter, sugar, honey, warm water, and eggs.
  3. Add the liquid mixture to the flour mixture and stir until a homogeneous dough is formed.
  4. Cover the dough with a clean cloth and let it rise in a warm place for about 2 hours.
  5. Preheat the oven to 220°C and bake the dough for about 1 hour, or until the bread is golden brown and sounds hollow when tapped.
  6. Allow the rugbrød to cool completely before slicing and serving.

The story

Rye bread has a history dating back to the 17th century, initially used as a backup bread for poor families. Today, it has become a national culinary symbol, beloved by all.
