A traditional Pakistani dish, Rogan Josh is a delicious and spicy beef curry in a rich red sauce.

Ingredients
- 500 g of beef cut into pieces
- 2 medium onions, chopped
- 3 carrots, diced
- 2 ripe tomatoes, cubed
- 2 tablespoons of red wine vinegar
- 1 tablespoon of chili powder
- 1 tablespoon of black pepper
- 1 tablespoon of turmeric
- 1 tablespoon of ground cumin
- 2 tablespoons of cane sugar
- 2 tablespoons of olive oil
- 1 teaspoon of ras el hanout
- 2 tablespoons of red wine vinegar
Method
- In a large pot, sauté the onions and carrots in a bit of olive oil.
- Add the beef and sauté until it starts to caramelize.
- Add the tomatoes, turmeric, chili powder, black pepper, and ras el hanout. Stir well.
- Cover the pot and simmer on medium heat for 30 minutes.
- Add the red wine vinegar and sugar, stir well, and continue to cook for another 15-20 minutes until the sauce has thickened and the beef is fully cooked.
- Serving suggestion: serve the Rogan Josh with basmati rice and bread.

Rogan Josh has its origins in the northwest of Pakistan, particularly in the Azad Kashmir region, where it has been prepared for centuries as a festive dish.
